My 2nd Favorite Recipe from Zatarains

Prep time-15 min|Cook Time-1 Hour

Ingredients:
1   pk of Zatarains Jambalaya Mix
1   lb of cooked ham, coarsely chopped
8   eggs, lightly beaten
2   cups half & half
2   cups shredded Monterey Jack cheese
½  cup of chopped red bell peppers
¼  chopped green onions

Prep:
1.  Prepare Jambalaya Mix as directed on package, using ham in place of the smoked sausage.
2.  Preheat oven to 350 degrees. Mix eggs and half & half in large bowl until well mixed. Add cheese, bell pepper, and onion; mix until well blended. Set aside. Spread rice mixture evenly in bottom of greased 13x9 inch baking dish. Pour egg mixture over top.
3. Bake 30 minutes or until eggs are set. Let stand 5 minutes before serving.
